Rainbow Detox Soup

Makes about 4-6 servings

The prep:

  1. Add oil to pot, followed by onion, carrots and celery. Allow to cook for about 5 minutes, add garlic, broccoli and cauliflower. Season with salt and pepper. Continue to cook for another 5 minutes, add zucchini and cabbage.

  2. Season with cumin, cayenne, dill and nutritional yeast — add more salt and pepper as needed. Stir seasonings around in pot. Add fresh ginger and turmeric.

  3. Pour in garbanzo beans and mix around in pot for about 2 minutes, then add broth. Bring broth to a boil and then reduce to a simmer. Add full parsley, thyme and bay leaf. Cover with a lid and allow to cook on low for 25 minutes. Turn off heat and let sit covered for another 10-15 minutes. Squeeze lime juice last.

The goods:

  • 3 tbsp coconut oil

  • 1/2 yellow onion, sliced

  • 1/2 stalk celery, sliced

  • 4 carrots, sliced

  • 3 cloves garlic, minced

  • 1-2 broccoli heads, florets

  • 1/3 purple cabbage, sliced

  • 1/2 zucchini

  • 1/2 head cauliflower, florets

  • 1/2 inch fresh ginger, minced

  • 1/4 inch fresh turmeric, minced

  • 1/2 tsp cumin

  • 1/4 tsp cayenne

  • 1/4 tsp dill

  • 1 tbsp nutritional yeast

  • salt and pepper

  • 5 sprigs parsley

  • 2 sprig thyme

  • 1 bay leaf

  • 2 cups of broth

  • 1 can garbanzo beans

  • 1 lime, juiced
