Chocolate Chunk Sweet Potato Bread

You know how we have to wait until fall in order to eat pumpkin bread? Well I have some exciting news for you… I have created the summer version of pumpkin bread, and it is made from sweet potatoes. This is a sweet, moist bread combined with the perfect blend of spices that bring a sense of comfort and satisfaction as you take each bite. Let’s not forget about the chocolate chips that melt in your mouth and make this bread truly irresistible. I’m telling you, say goodbye to banana bread (yes, I said it) and hello to sweet potato bread, because it is absolutely delicious.

BONUS: sweet potatoes are incredibly good for you, containing magnesium, calcium, fiber, potassium, vitamin C, B and A. Most importantly although they taste super sweet, they really are low in sugar. This sweet potato bread is made with 100% natural sugars (besides chocolate chips) and a blend of almond flour and whole wheat flour, so basically this bread is guilt-free??

Anyway, this is a fan favorite around the house and definitely one of my favorite breads to date!


6 Easy Steps:

  1. Turn oven on to 400F

  2. Heat sweet potato in microwave under a wet towel for about 4-5 minutes, or until fully softened

  3. In a small bowl, combine dry ingredients and whisk

  4. In a large bowl, combine wet ingredients and mix well

  5. Slowly incorporate dry ingredients with wet ingredients using a wooden spoon. Do not over-mix! Once combined mix in chocolate chips

  6. Pour batter into bread pan and top off with cubes of chocolate and bake for 45-60 minutes. Allow to cool before eating!

What you will need:

Dry Ingredients:

  • 1 cup almond flour

  • 1/2 cup whole wheat flour

  • 1/4 cup coconut sugar

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/8 tsp mace

  • 1/4 tsp nutmeg

  • 1/8 tsp ground clove

  • 1 tsp cinnamon

  • 1 tsp salt

Wet Ingredients:

  • 2 sweet potatoes, steamed

  • 1/4 cup butter, melted

  • 1/4 cup maple syrup

  • 2 eggs

  • 2 tsp vanilla

  • 1/4 c almond milk

  • 1/2 cup (or whatever you desire) chocolate chips

  • 4 cubes of chocolate from bar ( I had to use Hershey’s bc that is all we had but I would recommend a dark chocolate)
